During this course you will prepare a  3 poultry classic french recipies. This class aim at giving a  comprehensive approach to take the maximum benefits from each different meat parts. You will learn to bone off poultry and use all the parts to prepare, stock  and jus to season your meat and garnishes, various cooking techniques methods and acknowlege how to avoid losing the best organolepctic qualities.
