By the end of this class, participants will:

Participants will gain proficiency in making the perfect pâte à choux dough, ensuring the right texture for puffing and creating light, airy pastries. This skill is fundamental for creating savory éclairs and other savory pastries.

  2. Create a Range of Savory Éclairs:

    • Crab Avocado Éclair: Learn how to prepare a delicate crab filling and pair it with fresh, creamy avocado to fill an éclair shell. The class will cover techniques for balancing seafood flavours with the richness of avocado, creating a luxurious, savoury bite.

    • Mimosa Chicken Éclair: Understand how to make a flavourful, light chicken filling with a touch of mustard or herbs for extra depth, perfect for filling an éclair shell. Participants will explore techniques for achieving a balanced and flavourful filling that pairs beautifully with the choux pastry.

    • Salmon Rillette Éclair: Discover how to prepare a rich and creamy salmon rillette, a savoury spread, and how to pipe it into an éclair shell. The class will emphasize creating a flavorful, spreadable filling that complements the light, crunchy exterior of the éclair.

    • Cheese Gougère Choux: Learn to create savoury cheese gougères using choux pastry, filled with a delicious combination of cheeses like Gruyère or Parmesan. The focus will be on the proper technique to make these bite-sized cheesy puffs, which are perfect as a canapé or appetizer.

  3. Savoury Macaron Techniques:

    • Foie Gras Macaron: Learn how to create a luxurious foie gras macaron by preparing a smooth, velvety foie gras filling that will be sandwiched between two crisp, slightly chewy macaron shells. Participants will explore the balance of savoury flavours and learn how to make a macaron that is elegant, rich, and perfectly balanced in texture and taste.

  4. Perfecting Éclair and Macaron Shells: Gain insight into the key techniques for creating flawless éclair and macaron shells, focusing on achieving the right texture and consistency. Participants will learn how to achieve a delicate, light texture for both, ensuring they are crisp on the outside and tender on the inside, with a slight chewiness where appropriate.

  5. Presentation and Plating: Understand how to beautifully present savory éclairs and macarons, using garnishes and plating techniques that enhance the visual appeal of the dishes. The class will explore how to make each pastry look as elegant and refined as it tastes.

 

Through this class, participants will gain valuable skills in creating two of the most iconic French pastries in a savoury format, exploring both the technical aspects of pastry-making and the creative side of flavour pairing and presentation.
