Our Boulangerie/Bakery Chef Diploma program is designed for passionate individuals, whether you’re a professional seeking advancement or someone looking to switch careers to become a Professional Chef Boulanger/Baker.

The program spans 520 hours (about 4 months), emphasizing hands-on practice in bakery techniques and repetitive actions.

This repeated practice helps you hone essential skills like kneading dough, piping, and decorating until they feel instinctive. By continuously refining your abilities, you’ll become better at recognizing and correcting mistakes, leading to a greater understanding of how various factors influence the final product and helping you avoid common errors.

Structure of the Course

Duration: approximately 4 months (520 hours of training + 80 hours of internship) 
It is composed of 2 levels. The course will be conducted in English with Thai translation.

Level I:

L’Essentiel: 240 hours of training in basic boulangerie recipes and techniques.  

Level II:

La Maîtrise: 280 hours of developing a range of modern and elaborating boulangerie techniques + 80 hours (minimum) of internship to discover the world of culinary professionals and apply practical skills acquired during the training.

The examination will be taken at each level, with both theoretical and practical parts. The student must pass the exam to progress to the next level. After completing an internship at Lenôtre or other companies, the student must submit a written report within 1 week.
