Chef Wei Loon Tan
World Pastry Champion 2019
Chef Tan Wei Loon is the World Pastry Champion in 2019 (Coupe du Monde de la Patisserie) and the Asian Pastry Champion in 2018 and 2014, undisputedly one of the Best Pastry Chefs in Asia. He is APCA Malaysia Director of Pastry Studies. He has represented the Malaysian National Team in many international pastry competitions. His special skills are Modern French Pastry, Sugar Art, Airbrush Techniques, Chocolate Displays and Chocolate and Praline making. Chef Tan travels all over the world conducting workshops for pastry schools and pastry professionals.
Cyrille Van Der Stuyft
M.O.F Baker 2015
Cyrille Van Der Stuyft, head baker and winner of the Best Craftsman of France (Meilleur Ouvrier de France) competition in 2015, began his career in the family bakery in Chartres. After winning several prestigious competitions, he went on to earn his professional and master’s degrees at the INBP in Rouen. He started off as an instructor, teaching at the CFA in Chartres, and became a demonstration technician for Minoteries Guiard before winning the M.O.F. title when he was only 27 years old. His varied career path has led him to work as a training consultant, helping to develop bakeries around the world. Cyrille excels in the creation of viennoiseries, demonstrating exceptional precision and aesthetics. His book “Viennoiseries leçons en pas à pas” is a reference in the field.
Intensive Bakery course
Our awarded instructor will provide a 10-day practice-focused training that will gradually challenge you on building your bakery skills. We delicately design our programme to equip you with professional techniques and the most essential recipes for amateurs or entrepreneurs. Consecutive 2-day lessons allow learners to acquire comprehensive knowledge in the art of baking without skipping any steps, from mixing raw products to follow all essential fermentation processes before baking the perfect product. Professionnal Diploma Programmes
A unique training to prepare tomorrow’s great chef’s “Hand-on learning”, the core value at Lenôtre professional school, promotes the practice and experience of technical precision. By choosing our certifying course, a six-month programme, trainees are immersed in Lenôtre’s culture alongside top-tier chefs. Fully surrounded by a culinary environment of diverse skilled craftsmen and facilities, trainees in search of excellence acquire fundamental techniques and quickly become highly qualified professionals.

Our Cuisine Chef Diploma programme is intended for passionate professionals or anyone who wishes to change careers and become a Professional Chef Cuisinier. We offer a training period of 840 hours (approximately 7 months), with an intense focus on practicing cuisine products and repeating gestures.
Given the intensity of this program, each candidate needs to be genuinely motivated by careers in cooking or gastronomy in general.

Our Pastry Chef Diploma programme is intended for passionate professionals or anyone who wishes to change careers and become a Professional Chef Pastry. We offer a training period of 840 hours (approximately 7 months), with an intense focus on practicing pastry products and repeating gestures. Teaching is provided in classes with a limited number of 12 students.

Our Bakery Chef Diploma programme is intended for passionate professionals or anyone who wishes to change careers and become a Professional Chef Baker. We offer a training period of 520 hours (approximately 4 months), with an intense focus on practicing bakery and repeating gestures.
