Our Boulangerie Chef Diploma programme is intended for passionate professionals or anyone who wishes to change careers and become a Professional Chef Boulanger. We offer a training period of 520 hours (approximately 4 months), with an intense focus on practicing boulangeries and repeating gestures. 

Structure of the Course

Duration: approximately 4 months (520 hours of training + 80 hours of internship) 
It is composed of 2 levels. The course will be conducted in English with Thai translation.

Level I:

L’Essentiel: 240 hours of training in basic boulangerie recipes and techniques.  

Level II:

La Maîtrise: 280 hours of developing a range of modern and elaborating boulangerie techniques + 80 hours (minimum) of internship to discover the world of culinary professionals and apply practical skills acquired during the training.

The examination will be taken at each level, with both theoretical and practical parts. The student must pass the exam to progress to the next level. After completing an internship at the Lenôtre workplaces or in establishments chosen by the school, the student must submit a written report within 1 week.
