The Lenôtre Diploma is a comprehensive programme with hands-on practical classes covering all essential topics in either cuisine, pastry, or bakery. The programme is delivered over 840 hours directly in our laboratories by French chefs.
Yes, all Diplomas delivered by Lenôtre are internationally recognised. The first Lenôtre school was opened more than 50 years ago and has trained numerous successful chefs in France and internationally.
The Diploma programme is divided into three levels:
Beginner: to assimilate the foundations.
Intermediate: to reinforce the foundations while practising advanced techniques.
Master: dedicated to delivering culinary art knowledge at an expert or fine-dining level.
Level 1 is designed to provide a solid foundation for beginners in their chosen topic. The goal is to master all the classic recipes upon which French pastry, cuisine, or bakery arts were built.
Level 2 of the Diploma programme is designed to reinforce the knowledge acquired during Level 1, allowing for greater autonomy in the workplace while learning advanced techniques and recipes.
Level 3 is designed to bring together all the advanced techniques necessary to master culinary arts at a fine-dining level, with a high degree of sophistication in the chosen specialisation. This level also includes training with a renowned chef to complete the certification.
Yes, it is possible if the candidate already holds a relevant certification in the subject they wish to study. A practical assessment is required before entry to validate the application and assess the applicant's current level.
Yes, it is possible if the candidate already holds a certification in the subject they wish to study from an accredited institution and this certification has been validated by Lenôtre. If the missing level was not completed at an accredited institution, the candidate must complete all three levels of the Diploma programme.
