In this advanced pastry class, participants will learn to recreate and reimagine some of the most iconic French pastries, with a modern twist. This hands-on class will focus on key techniques, innovative flavor combinations, and creative presentation.     • Discover how to achieve the perfect caramelized sugar garnish and decorate with a beautiful, modern finish.

    • Learn how to make a delicious New York Roll, a twist on a classic American pastry, incorporating layers of puff pastry and a rich pastry cream filling.
    • Master the technique for rolling and assembling the pastry with precise layers, and creating a smooth, glossy glaze.
  3. Ice Cream with Feuilletée Cone
    • Discover how to create a feuilletée cone, a delicate, crispy puff pastry cone that pairs beautifully with homemade ice cream.
    • Explore techniques for molding the cones and ensuring a light, crispy texture that holds up well against the ice cream.
