Learn to prepare four classic French lobster recipes and use all lobster parts for a zero-waste menu. Different techniques will be studied from, cutting lobster, making fresh pasta, cook lobster stock and oil, make risotto, and finally prepare a Thermidor, recipe created by Auguste Escoffier.
