During those two days, based on his experience as executive chef in Spa private clinic in Switzerland, David Alessandria will teach how to make six healthy vegetal starters with one appetizer, suitable for vegans, with a modern design, cooking techniques and precise plating for a fine dining menu.

Day one:

  • Radish and vanilla appetizer
  • Lentils, samphire, pistachio
  • Leek vinaigrette dressing 2.0, black garlic.
  • Carrot curry, pomegranate

Day two :

  • Modern Celery rémoulade, nuts and basilic
  • Fermented beetroot ravioles dill and capers
  • Spiny artichokes, shiso, saffron
