The 2 days Puff pastry variation program is designed to provide participants with a solid fundation and comprehensive knowledge with a hands-on experience in the art of baking traditional sweet and savoury puff pastry recipes. This program is suitable for both beginners & experienced bakers looking to enhance their skills & techniques, with our titled baker chef Pierre Saucès. Those two days are a fun combination of baking and cuisine.

Keypoint:

  1. Assimilate and master all the inverted techniques of lamination, layering butter, folding & shapping to create the perfect puff pastry.
  2. Learn to decline puff pastry in savoury products.
  3. Learn how to troubleshoot common lamination and baking issues & achieve consistent, high-quality results.
  4. All learners will prepare the fillings, from patissière cream, almond cream, apple compote, Bolognese, chicken in cream sauce with mushroom.
  5. 100% learning by doing all products involved.
